How To Brine And Smoke A whole Turkey

The Turkey Brine Recipe I used for this Smoked Turkey:
* 1 Gallon Apple Cider
* 1 Quart Grape Peach Juice (or 1 Quart Apple Cider or Water)
* 1/2 Gallon Water
* 1 Tbps Black Peppercorns
* Dried Thyme (about 4 Tbsp)
*3 Tbsp Fresh Oregano
* 3 Bay Leaves
* 2 Cups Kosher Salt
* 3 Tsp Garlic Minced

The Weber Smokey Mountain was used without the water pan. I used 1 chimney worth of Kingsford Charcoal that was about 75% lit. I also used 3 chunks of Pecan Wood.

I cooked this Turkey between 350 to 375 degrees. If your Smoker is running hotter, that is great. I personally like cooking my Turkeys between 400 to 450 degrees.
