Spatchcock chicken is a chicken that has had the backbone, sternum, or both removed before grilling or roasting. The reason for spatchcocking a chicken is because it allows you to flatten your chicken to cook it more evenly than roasting the chicken whole.
To make brick chicken we not only spatchcock the chicken, but add a brick on top to flatten it even more. Brick chicken not only allows the chicken to cook evenly, but will allow for even faster cooking and an even more crispy chicken skin.
