How To Brine and Smoke A Whole Turkey

I have many turkey recipes, and this is my recipe for smoked turkey. For this recipe, I used my Weber Smokey Mountain to smoke my turkey. Before

I put my turkey on the smoker I made a turkey brine with ingredients that i had available. There is no reason to follow an exact recipe for a turkey brine. All that you want to do is make sure that whatever ingredients you use for your turkey brine are packed with flavor. I was able to brine my turkey for 12 hours. Closer to 18 hours would have been ideal. The ingredients i used for my turkey brine were:

  • 1 Sliced Orange
  • 1 Container apple juice concentrate
  • 1 Cup Brown Sugar
  • 4 Tbsp Salt
    *1 1/2 Tbsp Garlic
  • 3 Tbsp Rosemary
  • 3 Tbsp Oregano
  • 3 Tbsp Thyme
  • 3 Tbsp Onion Powder
    *6 Bay leaves
  • 3 Oz Honey

    The injection that i used was a Tony Chachere’s Creole butter with jalapeno. I highly recommend Tony Chachere’s Injectables. They can be bought at most stores for under $4 with the injection needle.

    I stuffed the cavity with oranges, celery and jalapenos. You can use just about any fruit or vegetable to stuff the turkey cavity. I used what i had on hand that needed to be used.

    The Weber Smokey mountain was used without the water pan. I used 1 chimney worth of hot coals and about 1/2 of a chimney un-lit. i also used 3 chunks of cherry wood.
