Fries on the Smoker

Done this before but one of my favorite ways to do up some fries is to smoke some bacon and capture the grease then put a thin layer in a large iron skillet then lay the fries in there for the first half of the cook in the smoker and finishing them on the rack for the last half. Hard to beat half fried/baked fries on a smoker with a hint of bacon. Every time I make a tray they disappear fast during football games. If I’m pressed for space on the smoker I’ll get a smoker box running wood chips in my gas grill on the side and finish them off in there instead of the pellet grill depending on how many people. You know it’s a good game day when you got multiple grills going to feed your guests.
