BBQ Buffalo Chicken Thighs – Slow N Sear

BBQ Buffalo Chicken is usually made with wings, crisped up on the BBQ, and then coated in tangy Buffalo Sauce, wings are great, but sometimes I want something a bit meatier. So Buffalo chicken thighs hit the right spot for me.

Simply mix cornflour with your favorite BBQ dry rub, hereby ones work best, in a 70/30 ratio, toss the chicken thighs in the seasoned mix until fully coated, then cook on a hot grill, indirect at 280-300c you can make use of a Slow N Sear or use a vortex to ramp up the temps. Spritz with a misting of rapeseed oil occasionally to help them crisp up. Ensure the chicken thighs reach 74c minimum, I take mine to 80c.

Then drizzle over with your favorite Buffalo Sauce, I went with the wonderful Sauce Shop Buffalo Sauce, which is pretty much perfect.
