There are a ton of Caribbean side dish recipes online that should pair well, but I like fried Plantains, or you could do sweet potato with Caribbean flavors as well.  Roasted potatoes, Spanish rice.  There are really a lot of things.

Agree with not wetting the chips, it does nothing but I feel people do it in hopes it will stop them from burning up so fast, but once they dry out which doesn’t take long, they burn up rapidly. I hardly ever use chips unless I can’t find the variety of wood I’m wanting to use in chunks. I have used warm beer when doing the beer can technique, and it will never be as good as the technique I show in this video period. I prefer cooking any meat with the bones in.
