Smoked Iberico Belly Ribs

Fresh from the PitmasterX.  Amazing awesome ribs.  All it takes is 4 Hours and here is the breakdown.

Planning & Schedule:
04h45m -Start your barbecue or smoker and set it up for indirect heat. Temperature setting 110 degrees Celsius or 225 Fahrenheit.
04h15m – Remove the silver skin and cut the belly ribs in to a straight shape.
04h05m – Rub the ribs with olive oil and the bacon flavored rub
04h00m – Smoked the ribs for about 4 hours
01h10m – Render down the fat of the bacon by baking it in a pan.
00h55m – Separate the fat from the bacon
00h50m – Dice the red onion and soften it in the bacon fat
00h40m – Add the rest of the sauce ingredients, the bacon and let it simmer for 10 minutes
00h30m – Brush on the bacon barbecue sauce 2x during the last 30 minutes of smoking on the ribs
00h00m – Enjoy your butter and sage chicken
