Very delicious recipe and so moist. Juice was just pouring out of this chicken.

The color of that chicken tells the whole story. It looks spectacular! Love the idea about putting the beer in the water pan.

I hated pouring 3 perfectly good beers into that pyrex, but the pay off was well worth it, besides, I had plenty of my flavor in the fridge, lol!  Yes, the pimento wood definitely has a flavor different from most all other smoking woods, and imparts a fantastic flavor that pairs so well with the sauce. Any true jerk chicken, which this wasn’t, is always smoked with pimento wood. One of the key ingredients in a jerk seasoning is allspice, and that is nothing more than the seed that comes from the pimento tree.  Awesome flavors my friend 🙂” – Smoky Ribs
